What is your supermarket guilty pleasure?

Cookies! Of any kind

‍

Where do you like to eat out?

I’m over super fussy, degustation venues. I want simple, tasty, ideally share style experience so my go to is Essa, Norte, and Snackman

‍

What’s a favourite you like to cook for friends?

Simple and effective is a Pie. Throw all the flavours and ingredients in, then bang a pastry lid on! Voila

‍

What’s a food trend you think is completely overrated and what ingredient deserves more hype?

Overly complicated coffee! - Espresso or Piccolo - no need for double frappe cold foam vanilla syrup mocca on soy with matcha and jelly bits.

More hype for local producers! That’s what I find cool! Knowing that the produce you’re eating has travelled from down the road, from a local farmer/producer/grower.

‍

What’s your perfect day off meal you would cook for yourself? (Just for yourself, nobody’s watching)

My partner recently bought me a Gozney Pizza oven and I am obsessed with it! I have been known to eat multiple pizzas solo (in the realm of making the perfect Pizza of course) My current winner is Potato, Rosemary, Garlic and Blue Cheese! or Nduja and honey pizza. Tough call.

‍

What is your death row dinner?

My Nan's Roast Dinner. Undefeated in the realm of the crispiest, fluffiest, most delicious roasties!

‍

Name your 4 dream dinner guests dead or alive?

- Toto Wolff - Mecades Benz F1 Principle

- Nate Bargatze - Hilarious Comedian

- Stanley Tucci - Foodie and Great Actor

- Dolly Parton - Country Music and fascinating person

‍

What dish have you created that you are most proud of?

The Coral Trout Wellington dish is a dish I’m very proud of, as its’ utilising amazing Australian Seafood, it’s elegant, layered and a real guest favourite. But for me, it also makes sense for the flow of service. It's a pain in the arse to prep, but for service, it's super simple and those are the kinds of dishes you need for a busy restaurant.

‍

What chef do you admire the most?

Adam Byatt of Trinity in the UK - His venues are all considered with a strong brand identity and his food just looks soo tasty - clever cooking!

‍

What dish does everyone have to try at Marlowe?

‍Everyone will say the Coral Trout Wellington, as they should, because it is a fantastic dish, but for me it has to be the crispy brussel sprouts with maple and chipotle mayo, and feta. I snack on these way too often during service. It's sweet, spicy, rich, creamy, bitter, salty - just hits every spot.
